Homemade pastas from scratch are the best. The creamy mushroom sauce was amazing and it made a perfect weekend dinner.

Hi Tom, yes buckwheat flour is a good alternative to chestnut flour. Of cours, as you say, the flavour would be different but still very good!

Hi Tom, sorry for the delay in replying, I have been on holiday. Yes, you could definitely use wide ribbon pasta with this mushroom sauce. It would work well too!

Would buckwheat flour work as a substitute for chestnut flour? It may have a different flavor, but I suspect it would be quite good, too.

Instead of making maltagliati wit the chestnut dough, wouldn't a moderately wide ribbon pasta work nicely with the mushroom sauce?
